Meet The Owner

Hello and Welcome!

My name is Donte Eckles, affectionally and professionally known as Fly Fat Guy Cooks LLC., or simply Chef Nick.  I am a self-taught creative Chef and Entrepreneur.

My passion for feeding the body, mind and spirit runs deep. I have been developing my craft since the age of eight when I assisted my beloved grandmother as she cooked for our growing family. Watching my grandmother and working so closely with her was and is a cherished memory of mine. She instilled in me the value of providing quality service and fantastic flavors with every bite. For me, my journey has been a labor of love. I am a natural leader and business minded professional.  It has been my pleasure to have developed my skills, my style, my brand, and my unique take on delicious food to get me where I am today as Chef Nick, your friendly neighborhood Chef.

Who We Are
About Fly Fat Guy Cooks

Fly Fat Guy Cooks LLC., comes from my grandmother’s teaching, guidance, and love of feeding the family.  I was also influenced by my loving family which encouraged me to enroll in professional cooking classes that combined with my experience at the time eventually led me to become the Head Chef responsible for four nursing homes under Catholic Charities. As head chef, I was responsible for all facets of operational procedures which included scheduling, upkeep of stock and supplies, timely delivery of meals, creation of meal plans tailored to the nutritional needs of the residents, meals for employees and staff, as well as the Head Chef for preparation of meals for the multiple parties and banquets that were held.

During this time, I operated Fly Fat Guy Cooks LLC., on the weekends running my own kitchen.  Recognizing the growth of my patrons from my community, around Maryland and out of towners, I knew it was time to make Fly Fat Guy Cooks LLC., a priority.

I now run my kitchen with the aid of three employees, one of which is my beautiful mother.  I trained my employees and educated them on the techniques I use that have made me a community favorite. We cater for parties of all kinds, birthdays to weddings.  Our menu is unique and has something to offer and satisfy anyone.

I welcome you to come and enjoy delicious food prepared for the soul, the body, and your taste buds. Customer satisfaction and a desire to keep you coming back is the goal of Fly Fat Guy Cooks LLC., and me Chef Nick.
